If you prefer a light roast that's bright and clean without being thin or sour, Bossa Nova delivers. This Nicaraguan single-origin comes from UCCEI (Unión de Cooperativas de Cafés Especiales Cordillera Isabelia) a cooperative founded in 2009 by farmer and agronomist Kenia Ubeda, uniting 900+ smallholder members across Matagalpa. Grown at 1,100–1,350 masl in fertile volcanic soils under shade and mixed agroforestry, these beans are certified organic and exported as SHG/EP-grade specialty lots.
The lot is washed and patio-dried: ripe cherries are selectively harvested, depulped, fermented, and fully washed before drying, a process that preserves the clean, structured cup Matagalpa is known for. Classic Central American cultivars (Caturra, Catuai, Catimor) contribute bright acidity, a medium body, and clear notes of citrus, chocolate, and stone fruit. It's a great choice for pour-over or Chemex where those delicate flavors can come through.
Beyond the cup, UCCEI invests in farmer training, education, healthcare access, and an internal credit fund, linking smallholders in Matagalpa directly to specialty roasters (like us) worldwide.
